Ugh. Who’s bright idea was it to schedule a make-up exam at 8:30 on a Monday?!? Oh. Wait. Nevermind. I know I did poorly on the Sensory exam. SO much information to memorize, and I just didn’t. And OF COURSE one of the big mark questions was on the beer style that I have the biggest memory block on. Stupid Bocks. (Bocks, you know I’m kidding. You’re delicious!). Days 168 to 175

Sick. So very, very sick. I woke up on Tuesday morning around 3 with that distinctive gargled-with-broken-glass feeling caused by strep throat. I headed to a walk-in clinic where it was confirmed, I bought a doctor’s note and went home to email Ray that I would be missing the Equipment exam. What followed is a week of just generally feeling like shit. I think I managed to sleep for 5 hours straight one night. Days 162-164

Day 162 My team was on the craft side today. After mashing in a batch of Campus Ale, we were distributed to various other jobs in the brewery. I spent the day looking at the keg washer and getting much better at not getting sprayed with stale beer when attaching the hoses.   Day 163 First up was All About Pasteurizers in Packaging. Rob talked about the differences between a flash system (beer is pasteurized and then packaged) and a tunnel system (beer is packaged then pasteurized). Day 135

Alas, I was bedridden yesterday, so there was no Day 134. Well technically, there was still a day 134, but I wasn’t in the teaching brewery as I was home in bed. I’d prefer not to say what was wrong with me; we’ll just agree it wasn’t pleasant and leave it at that. So on to day 135. Packaging was all about filling lines and filling line planning today and understanding what a V-graph is. Day 80 – Friday, Nov. 21

This was the second early morning sensory class. My system is just not sure about ingesting beer before the coffee has even had a chance to wake me up yet. It will get used to it just in time for the semester to be over and the schedule to be shifted around. It was all about hops this morning, and we rubbed, smelled and tasted the noble hops (Hallertau, Tettnang, Saaz and Spalt) and near-noble hops (East Kent Goldings, Syrian Goldings, Hallertau Herbrucker and Fuggles. My favourite is Fuggles – I like its earthy and slightly floral notes the best. …
